This is a recipe that was missing in action for quite a while but never been forgotten. Last weekend, I decided to take a break from Italian cooking and prepare this dish for a friend who came over for lunch.


Chicken pieces




Young ginger

Plain yogurt


Turmeric powder

Black pepper

Sea salt

Olive oil

Wash chicken, pad dry and put into a plastic bag. Blend all other ingredients and mix it thoroughly with yogurt. Marinate chicken with mixture. Tie up plastic bag and leave overnight in the fridge.

Preheat oven to 428F/220C. Bake chicken for 25 minutes and turn to grill for another 10 minutes.

This meal goes well with plain stem rice and perhaps a glass of ice lemongrass drink.

    1. Thank you for your nice comment. Yes its really easy and the best part is all ingredients are not expensive. I always like using affordable ingredients to create rich dishes.

  2. This looks so good it’s almost too painful to look at – I bet it’s tangy, and those browned bits are full of flavour. But what is this lemongrass drink? I love the sound of that. How do you make?

    1. Hi Gabriela, thank you very much for your kind comment. yes its tangy and you can add honey to balance it but i leave it out this time to make it really spicy.

      lemongrass drink is common in Thailand and it is easy to make. get a bunch of fresh lemongrass. discard hard and dirty bits and chop into long pieces. pound the thick root portion until it splits and release strong flavor. depending on how strong you want your drink to be, throw the lemongrass into your preferred amount of water and bring to the boil. Then turn to low heat and simmer for an hour. add in sugar to taste. serve it cold with ice cubes. you can also add in some vodka to give that extra kick.
